Perfect for a really hot day here in Arizona, crisp and cooling. Cucumbers and snow peas have a high water content, so are great for replenishing lost fluids.
Snow peas are high in lots of vitamins and minerals, but specially in Vitamin C that’s great to boost your immune system and Manganese, that helps your body form connective tissue, regulates fat and carbohydrate metabolism, calcium absorption and blood sugar regulation.
Ingredients
2 cups- snow peas, thinly sliced
3 cups- cucumber, shredded in long pieces. I use Sunny Valley Organics, organic english cucumber.
1/2 cup- red onion thinly julienned
2 limes
1 tablespoon of ponzu, tamari or soy sauce. I use Kikkoman ponzu sauce.
2 teaspoons toasted sesame seeds
Salt and pepper to taste. I use Himalayan pink salt and cayenne pepper for this one.
Let’s do it!
Chop the onions and add the salt, pepper and limes to let marinate while you wash and cut the rest of the ingredients.
Add the sliced snow peas and shredded cucumbers and mix.
Add the ponzu sauce. Taste and adjust seasoning. {Remember, soy based sauces are high in sodium, so be conscious about the added salt when seasoning}
Top with the sesame seeds and enjoy!
